don't say i never did anything for you

here's a really easy recipe for baked brie with raspberry sauce. i think baked brie is rockin' and seems like a "rah-shah-shah" thing to serve, so i'm thinking i will be having it at my new year's party (even though it is the ghetto version, with crescent rolls and jam). the only change i would make is, you should serve red grapes with it instead of apple slices. i do recall that christine also makes a slammin' baked brie...perhaps if she's reading this, she can post the recipe...?

  • 1 tube of refrigerated Pillsbury crescent dinner rolls
  • 1 round or wedge of Brie cheese
  • Raspberry Jam, or other sweet jam
  • Brown sugar
  • 1/4 cup of maple syrup

Preheat oven to 350 degrees F.

On a stick-free cookie sheet, lay out the crescent rolls flat; put brie round or wedge on top. Spread jam on brie, fold crescent rolls over top. Drizzle maple syrup over rolls and place a handful of brown sugar on top. Bake at 350ยบ for 25 minutes. Let cool for 10 minutes before serving.

Serve with crackers and apple slices.

Of COURSE I'm reading this!! I never miss my Mondo fix! Let's see. I get a wheel of brie and the frozen puff pastry sheets, found in your grocer's freezer. It comes in sheets so take a sheet and thaw it enough to wrap it around a wheel of brie. (I find it's better to microwave the brie just a bit to warm it up before wrapping it so it's warm and melted when the puff pastry browns. Otherwise you might have browned puff pastry and cold brie). Slather some raspberry preserves or jam (sorry, I don't measure, just slather until it looks like enough and I don't think you can put too much raspberry jam on this), wrap it in the puff pastry and bake til brown. Serve right away. Mmmm good.
